1) How many regions of Cognac are there, and what is the difference between the regions?

There are 6 different regions within the Cognac appellation. Grande Champagne (about 12,000 hectares), Petite Champagne (14,000 hectares), Borderies (3,500 hectares), Fins Bois (30,000 hectares), Bons Bois (10,000 hectares) and Bois Ordinaires (2,000 hectares).

Domaine Castel Sablons is to be found in the Fins Bois area, but we also stock and sell Cognac from the Petite Champagne region (our XO Cognac Grande-Siecle), as well as the Borderies region (our 20 year old Cognac).

The Fins Bois area has a rich clay soil, with a reddish hue, partial sand, and a high chalk density. It is generally diverse in character. In the Borderies region, the upper strata have lost much of their chalk, (only the lower strata retain it); there is a preponderance of silex and clay. The soil is a brownish colour. The Petite Champagne area is rich in chalk, crumbly and of a greyish colour.
